So I had a hankering for pancakes this morning but I wasn't really feeling a big breakfast production. Nor was I wanting to dip into the family Krusteaz mix(no offense!) I knew I had an easy, relatively healthy pancake recipe somewhere. And there, on one of my bazillion Pinterest boards, it was...3 ingredient pancakes! Score! Super easy to make and I dressed it up for a naughty breakfast treat because I had some cream cheese frosting I needed to get rid of....a single girls' gotta do what a single girls' gotta do.
You will need:
*2 eggs
*1 ripe banana
*Cinnamon(optional)
*Vanilla extract(optional)
**Chef's note: original recipe did not have vanilla extract, only optional cinnamon. Something about cinnamon, vanilla and bananas just sounded super yummy!
Also, she does warn to take care when flipping because they are a bit flimsy, I found this to be true, but if you take her advice and make smaller ones it's a lot easier.

i just broke up the banana and smashed it the best I can with a fork. I don't think it's super noticeable after they are cooked if there's little pieces in the batter.
So I turned the stove on medium heat and lightly buttered the skillet. This is the size I made them.
A little frosting melted and maple syrup over warm pancakes and voila!
An easy, quick breakfast treat!
